PROBLEM TO BE SOLVED: To economically obtain the subject compound useful for a nutritive food, a feed additive, a medicine, etc., by culturing a fungus resistant to cetyltrimethylammonium salt, capable of secreting inositol and collecting a cultured product. SOLUTION: A fungus [e.g. Candida boidinii CTMA3-2 (FERMP-15741), etc.] resistant to a cetyltrimethylammonium salt (e.g. cetyltrimethylammonium bromide), capable of secreting inositol is inoculated into a medium and shaken at 30 deg.C for 24 hours to carry out preculture. The culture solution is inoculated to a glucose-containing medium which is sterilized at 120 deg.C for 20 minutes with steam, subjected to shaking culture at 30 deg.C fir 72 hours. Glucose is added to the medium and the solution is cultured for 120 hours in total to economically give the objective inositol useful as a nutritive food, a nutritive auxiliary food, a food additive, a feed additive, a raw material and an additive for medicines, an additive for cosmetics. |
