<p>PROBLEM TO BE SOLVED: To obtain the subject pigment having no offensive odor, a smell and a taste, excellent in color tone and stability, and useful for a food, a beverage, etc., by contact-treating carbon dioxide in a subcritical or a supercritical state with an adsorbing resin. SOLUTION: This method for purifying a water soluble natural pigment is to contact-treat an adsorbing resin (e.g.; styrene-vinylbenzene-based resin) adsorbing a water soluble natural pigment (e.g.; anthocyanin-based pigment) with carbon dioxide in a subcritical or a supercritical state for removing impurities, then desorb the object pigment from the adsorbing resin. Further, it is preferable to use a solvent obtained by mixing a hydrophilic organic solvent such as ethanol with water in an optional ratio, etc., in desorbing the pigment from the adsorbing resin.</p> |
