PURPOSE:To simply obtain deep colored soy sauce without using additives at all by separating pasteurization sediments of say sauce, further separating pasteurization sediments therefrom, filtering the reseparated pasteurization sediments and concentrating the filtrate with a reverse osmosis membrane. CONSTITUTION:The objective soy sauce is obtained by separating pasteurization sediments of soy sauce, further separating the pasteurization sediments therefrom, filtering the reseparated pasteurization sediments and filtering the resultant filtrate with a reverse osmosis membrane having 100-1000 fractionation molecular weight preferably at 30-50 deg.C temperature under 20-50kg/cm<2> pressure. |
