PROBLEM TO BE SOLVED: To obtain an antioxidant composition by extracting oyster meat with hot water and provide its production. SOLUTION: This composition is produced by adding ethanol to a boiling water fraction of oyster meat to make the final concentration to at least 40w/w% (first step), concentrating the obtained supenatant in a solid part content of 30-45w/w% (second step), and then adding ethanol to make the final concentration to 55-70w/w% (third step) to recover precipitates. |
