Compounds with a 1,3-dioxane structure of general formula (I), wherein Z is pentyl or pent-2-enyl grouping (Z) or (E) and R is a hydrocarbon grouping, characterised in that they are prepared from apples or apple by-products, are disclosed. A method for synthesising said compounds by acetylising the corresponding 1,3-diol of general formula (II), wherein Z is as defined above, with an aldehyde of formula (a), wherein R is as defined above, is also disclosed. Furthermore, aromatic compositions containing the compounds with a 1,3-dioxane structure prepared according to said synthesis method, are disclosed. |
