Automatic disinfection unit for knives and other utensils in accordance with EC food hygiene standards comprises a stainless steel frame with holders for the utensils and a series of peripheral nozzles which point towards them. A container for disinfectant products is fitted to the back of the frame, which also has an electric heater, timer, automatic controls and an on-off switch. The unit's operation has three phases: (a) the utensils are sprayed with cold water for 10 s to clean them; (b) they are sprayed for 10 s with hot water under pressure and a disinfectant; and (c) they are rinsed with cold water under pressure for a further 10 s.
