Processes for the production of DHA (docosahexaenoic acid)-containing tofu (bean curd) and drinking soybean milk, and dry powders of them by using DHA-containing fish oil, by which DHA-containing fish oil can be incorporated into tofu and so on stably in a high concentration without any adverse effect on the tastes of tofu and so one and the raw material cost is lowered. The milk can be produced by mixing soybean milk with DHA-containing fish oil at a weight ratio of 1:0.2 to 1, stirring the resulting mixture to prepare an emulsion, and diluting this emulsion with soybean milk to a desired DHA concentration, while the tofu can be produced by coagulating this milk by the addition of a coagulant. Since the same soybean milk as that used as the raw material of tofu or drinking soybean milk is used as the emulsifier, the tastes and physical properties of tofu and other products are not influenced by the incorporation of DHA even in a high concentration. If necessary, the above tofu or drinking soybean milk can be converted into a dry powder by freeze, vacuum or spray drying. |
