PROBLEM TO BE SOLVED: To obtain a dehydration auxiliary for ground fish meats, enabling to suppress the addition amount of an easily water-soluble inorganic salt, dehydrate the ground fish meats in considerably good efficiency even at a relatively high pH in neutral region and improve the production yields of the ground fish meats, to provide a method for producing the ground fish meat, to obtain the ground fish meat rich in elasticity, and to obtain a fish paste product. SOLUTION: This dehydration auxiliary for ground fish meats comprises a water-soluble polyacrylate salt as an active ingredient or comprises the combination of the water-soluble polyacrylate salt with an easily water-soluble alkali metal salt. The method for producing the ground fish meat contains a process for dehydrating water-exposed fish meat in the presence of the water-soluble polyacrylate salt or a process for dehydrating the water-exposed fish meat in the presence of the water-soluble polyacrylate salt and the water-soluble inorganic salt. The fish paste product uses the ground fish meat containing the polyacrylate salt. |
