PROBLEM TO BE SOLVED: To obtain a vegetable juice suppressed in the precipitation of insoluble ingredients, such as pulp, contained in the vegetable juice to improve the dispersion stability of the insoluble ingredients by adding fine cellulose having a specific average particle diameter to the vegetable juice such as carrot juice. SOLUTION: Fine cellulose having an average particle diameter of <=20μm (preferably containing a fraction having particle diameters of >=10μm in an amount of <=70% in the particle size distribution) is added to a vegetable juice in an amount of approximately 0.005-3.0wt.% (converted into the solid content), preferably 0.1-0.5wt.%, based on the vegetable juice. The fine cellulose can be obtained by depolymerizing wood pulp, purified linter, etc., by an acid hydrolysis method, etc., and subsequently grinding the depolymerization product. |
