The invention describes an improved method for alpha-L-aspartil-L-phenylalanine (aspartame) methyl ester crystallization, starting from an aqueous solution, by conduction-cooling, while avoiding turbulence in crystallization system, wherein crystallization is carried out with cooling at a temperature level not lower than 10 degree C, in presence of at least 0.1 percent by weight of a ketone of C3-6, choosing ketone quantity and temperature level for each individual ketone, so that a homogeneous dissolvent system is present at crystallization starting, and an aspartame crystals open reticular structure, which can de drained, is obtained.
