PURPOSE:To supply a proper and necessary quantity of heat and provide sufficient porous products by supplying a more amount of heated oil in the front part of a transfer path in oil than that in the rear part of the path in the oil in a continuous reduced pressure frying method in which raw materials are transferred in the heated oil under reduced pressure. CONSTITUTION:A continuous reduced pressure fryer comprises a raw material casting device connected to a reduced pressure chamber 1, a raw material supply device for supplying raw materials and a product cooling chamber. The reduced pressure frying chamber 1 has a net conveyer 42 and leak valve 41. A portion of the net conveyer 42 making contact with the bottom surface of a transfer path is in oil and raw materials cast from a raw material casting device are there subjected to frying treatment. A plurality of oil supply sections 500 for supplying predetermined temperature oil in the shower-like manner are disposed above the front half part of the raw material transfer path of the reduced pressure frying chamber 1 and the raw material casting side. The oil supply section 500 has an oil amount adjusting valve to control the oil supply according to pressurizing time in a raw material defining chamber 54 and supply necessary quantity of heat to the raw material through a plurality of oil outflow ports 107. |
