A method of roasting with charcoal or electrical resistors with the food supported vertically, suspended in the vertical plane opposite a source of heat, also vertical, so that it is roasted by radiation alone, the food not coming into contact with or being contaminated by harmful substances in the combustion gases and environmental nuisance being restricted to the minimum since liquid fat is not burnt. The arrangement invented for realization of the method consists of the food to be roasted being suspended on two types of vertical pairs of grills 15, 16 or 72, 73 which are assembled with a facility to be positioned at a slight angle over fat collectors (pan shaped) 13 installed with the aid of carriers at controlled distances, opposite the heating surfaces of the heat source, also of vertical form, with one or two faces, charcoal 7 or, alternatively, electrical resistors 91, completed with the operational necessities and facilities for roasting. |
