The invention concerns a method for the biosynthesis of natural diol -1,3 derivatives of general formula (I) in which Z is the pentyl or pent-2-enyl (Z) or (E), preferably (Z) grouping, which consists in converting a natural precursor of said diols by means of one enzymatic complex and optional separation of the diols-1,3 obtained. The invention also concerns a method for the synthesis of natural 1,3- dioxanes structure compounds by spontaneous acetalisation of the diols-1,3 obtained by the above biosynthesis method. Finally the invention concerns any aromatic composition containing the natural 1,3-dioxane structure compounds thus prepared.
