PURPOSE:To expand the range of raw material selection and improve their utility factor by treating powdery raw materials or their formed products with dry heat and using them as at least a part of starting materials for saccharlflcation and/or brewage. CONSTITUTION:The powdery or formed starting materials of cereals, root and tuber crops, fruits, seeds, beans or the like are treated with dry heat. The heat-treated products per se and/or the treated products therefrom with malted rice (KOJI) and/or their enzymatically treated products are used as at least a part of the starting materials for saccharification and/or brewage. |
