Cooked reconstituted eggs are provided from separate bulk supplies of filtered and homogenised white and yolk material. The white is injected into each compartment of a base. At a second filling station a quantity of yolk is injected below the surface of the white to resemble a fresh cracked egg. Before or after the base is passed through a cooking station, each base is covered with a film of heat-resistant material bonded to the base, so that each compartment is sealed from the atmosphere. The base material may be perforated to facilitate its being separated into individual compartments, so that each egg may be treated individually before being served. |
