摘要 PROBLEM TO BE SOLVED: To obtain a raw material for a paste product having a suitable elasticity from a fish meat of a fish having a jelly meat due to the infection of a sporozoan by adding a specific trans-epoxysuccinic acid derivative at a processing step of the fish meat. SOLUTION: This method for processing a raw fish meat parasitized by a sporozoan comprises adding a trans-epoxysuccinic acid derivative of the formula (R<1> is H, Na or K; R<2> is a 6-10C saturated hydrocarbon group) at a processing step of a fish meat having a jelly meat due to the parasitization of the sporozoan. These trans-epoxysuccinic acid derivative is of an extremely low toxicity and added preferably by 0.0005-0.05 pt.wt. based on 100 pts.wt. raw material fish meat of a fishery paste product (a broiled fish paste, a cylindrical broiled fish paste, a fish cake, a fish-sausage, etc.).
