PROBLEM TO BE SOLVED: To obtain buckwheat noodles capable of corresponding also to buckwheat flours produced in foreign countries and having low qualities and having strong stiffness and tooth touch by kneading buckwheat flour with wheat flour in the presence of a starch syrup as a binder and subsequently processing the produced buckwheat noodle dough into the noodles. SOLUTION: For example, the mixture of buckwheat with wheat flour at a prescribed ratio of 80/20 is mixed with starch syrup as a binder preferably in an amount of 0.005-0.05wt.% (based on the whole amount of the mixture) and subsequently kneaded. The prepared noodle dough is processed into buckwheat noodles having a high quality. |
