PROBLEM TO BE SOLVED: To obtain a cooked rice-improving agent capable of improving the taste of cooked rice. SOLUTION: Rice having a bad taste and a nasty small, such as old rice or blended rice, is mixed with one or more kinds of 0.005-0.4wt.% of albumen powder, 0.005-0.1wt.% of ammonium sulfate, 0.5-3.0ppm of dry onion powder and 0.2-0.7ppm of dry garlic powder as a cooked rice-improving agent and a subsequently cooked. Since the cooked rice-improving agent can impart the same smell to the cooked rice as that of the cooked product of new rice, the agent can provide the cooked rice improved in the taste. The taste of new rice can also furthermore be improved. |
