PROBLEM TO BE SOLVED: To obtain a chitosan-containing jelly-like gelation product not exhibiting a pungent taste and excellent in taste and texture by dissolving chitosan in a polyvalent organic acid system buffer solution at a pH of a prescribed value or larger and subsequently gelling the solution together with agar. SOLUTION: Chitosan is dissolved in a polyvalent organic acid system buffer solution such as citric acid/sodium citrate system buffer solution at a pH of >=3 and subsequently gelled together with agar to obtain the chitosan-containing jelly-like gelation product. The chitosan-containing jelly-like gelation product is obtained e.g. by adding 2.5g of the chitosan, 3.3g of citric acid and 0.9g of sodium citrate to 100g of water, heating the mixture in a hot water bath to dissolve the chitosan, adding 200g of a 1% aqueous agar solution to the solution so as to give a total weight of 300g and a pH of 3.0, and subsequently cooling the mixture to produce the gelation product. The 1% aqueous agar solution is obtained by dissolving agar powder in hot water. |
