A food foaming agent composition which contains a glycerin fatty acid ester (preferably monoester) and polyglycerin fatty acid ester as an emulsifier. The composition does not contain a sorbitan fatty acid ester, a propylene glycol fatty acid ester or a sucrose fatty acid ester. The foaming agent composition is used for cake such as sponge cakes, butter cake and the like. |
