JAMS AND FLOWER PASTES HAVING HIGH QUALITY PRESERVATION

PROBLEM TO BE SOLVED: To enable long-term storage of jams or flower paste at a normal temperature without using any preservative by housing jams or flower pastes having a specific water activity and a specific sugar content into a packaging container in a low residual acid concentration. SOLUTION: The jams such as strawberry jam and orange marmalade jam or flower pastes which have 0.80-0.90 water activity and <=60 deg. sugar content and not containing any preservative are housed into a packaging container such as paper pack and plastic cup so that the residual oxygen concentration is <=2%.
