摘要 PROBLEM TO BE SOLVED: To obtain the subject new gene containing a specific amino acid sequence, coding a rice starch-branching enzyme having an amylopectin- synthesizing activity and useful for the improvement of rice breed enabling to realize the improvement of starch quality for food tastes and the efficiency improvement and stimulation of starch synthesis, etc. SOLUTION: This new gene codes a new rice starch-branching enzyme comprising a protein or polypeptide which contains an amino acid sequence of the formula, etc., or an amino acid sequence in which one or more amino acids in the above amino acid sequence are added, defected or substituted and which has an amylopectin-synthesizing activity. The new gene relates to the synthesis of the amylopection giving a large effect to the taste of starch, and is useful for the improvement of rice breed enabling the improvement of starch quality for food tastes and the efficiency improvement and stimulation of starch synthesis, etc. The gene is obtained by screening a cDNA library prepared from the mRNA of a ripened rice seed with a synthesized probe having a base sequence corresponding to the partial amino acid sequence of the starch-branching enzyme extracted from a rice albumen.
