PROBLEM TO BE SOLVED: To obtain a melatonin yeast, comprising melatonin and its metabolite in a microbial cell and capable of providing an ingredient excellent in beauty effects, promoting effects on appetite and nourishing and tonic effects by extraction by adding the melatonin or its salt to a culture medium and culturing a yeast of the genus Saccharomyces therein. SOLUTION: Melatonin or its salt is added to a culture medium to culture a yeast of the genus Saccharomyces. Thereby, a melatonin yeast containing the melatonin as the melatonin and/or its metabolite in the microbial cell thereof is obtained. Ingredients extracted with an aqueous solvent are remarkably improved in beauty effects, promoting effects on appetite and nourishing and tonic effects as compared with those of the ingredient extracted from a usual yeast fungal cell and emit a somewhat slight odor peculiar to the yeast. The usefulness in applications to cosmetics and foods is improved. |
