Automatic removal of spinal cords from carcasses

The spinal cord (1a) of a carcass is removed by sawing in an apparatus consisting of a base (2) with a vertically moving support (3) to carry the carcass. This presses against a sloping plate (4), the upper end of which (4a) can move from a first position along the plate to a second, providing sufficient space for the hollow cylindrical saw (11) to operate to remove the spinal cord. A system (6) holds the carcass firmly against the plate (4).
