摘要 PROBLEM TO BE SOLVED: To produce a vegetable juice high in added value without causing browning and a smell of scorching, by leaving a large amount of vitamin C in the vegetable juice. SOLUTION: In this method for producing a vegetable juice comprising a finely cutting process for grinding and/or milling a vegetable and a squeezing process for pressing the finely cut vegetable, after or simultaneously with the finely cutting, the vegetable is heattreated at 65 to 95 deg.C within 5 minutes since a reached temperature.
