PROBLEM TO BE SOLVED: To To obtain a rice cake-processed food excellent in shaperetaining property and heat resistance without joining to each other even if allowed to stand in hot water and useful for retort foods, etc., by kneading rice cake with water and treating the kneaded material with powder. SOLUTION: This rice cake-processed food such as noodle is obtained by adding water and further preferably 5-10 pts.wt. thickening polysaccharides such as mannan, preferably 1-3 pts.wt. disodium citrate, a glycerol fatty acid ester, an albumen-processed food or lecithin and edible oils and fats to 100 pts.wt. rice cake and kneading these components, rolling the kneaded material, treating the rolled material with powder such as sago starch and heattreating and cutting the treated material. |
