A processing assembly for solid fat has a housing enclosing primary and secondary pairs of butter reduction rollers arranged in series, and discharging through an outlet. The primary rollers consist of plug rollers (1) holding a number of stopper paddles (12); (b) the secondary rollers are extruder rollers (2) with a profiled surface; (c) the stopper paddles (12) are radially inclined outwardly with respect to the axis of stopper roller (1) rotation; (d) the paddles can be rotated with respect to the stopper paddle longitudinal axis (15), setting the paddle surfaces (18) transverse to the stopper roller direction of rotation, and in the return position are oriented in the direction of rotation; (e) the stopper paddle (12) is powered through a two-speed gear; (f) the stopper paddle (12) translates through a pitch angle of approx. 90 deg ; (g) most of the stopper paddles (12) are arranged in a single row (38); (h) the gap between adjacent stopper roller (1) surfaces is slightly greater than double the radial extent of the stopper paddles (12); (i) the stopper rollers move synchronised and in unison.
