摘要 PROBLEM TO BE SOLVED: To deal with such problems that, for example, among fishes and shellfishes, sea crucian carp wandering in a specific season and river crucian carp going against the stream are low in commercial evaluation and, occasionally, disposed as the feed or baits of cultured fish, or fish refuse meal as a fertilizer; and among autumn salmon wandering in a specific season, at least 30% thereof is considered as crucian carp with nuptial coloration and despite representing red flesh, they have no commodity value; therefore to utilize these fish and shellfish of low commercial evaluation and raise their added value. SOLUTION: Fishes and shellfishes and sea algae are seasoned with a seasoning material based on an extract derived from the same materials as them, followed by low-temperature fermentation aging, drying (and roast-drying or flattening roasting), thus affording the objective food bearing natural favorable delisiousness with no other any synthetic seasoning required so that even fish skin and small bones can be eaten.
