Aq. nutrient medium for growing propionic acid bacteria or a mixt. thereof with lactic acid bacteria under non-sterile conditions, contg. the following components: (a) sources of carbon, including 2-6 wt.% monosaccharides w.r.t. the water content; (b) sources of nitrogen; (c) macro-elements; (d) trace elements; (e) acetic acid alkali salts, including 0.7-2.0 wt.% acetate gps. w.r.t. the water content, and (f) buffer cpds. to ensure that the pH does not fall < 4 after the culture contg. propionic acid bacteria or a propionic acid/lactic acid bacteria mixt. has been left to stand for 2 days at 20-25 deg C. Also claimed are: (1) formulations comprising a dry nutrient medium and propionic acid bacteria or a mixt. thereof with lactic acid bacteria and (2) biologically pure propionic acid bacteria cultures with deposit numbers DSM 9576, DSM 9577 and DSM 9767.
