PROBLEM TO BE SOLVED: To produce an oil and fat composition which inhibits the deterioration with high-temperature heat, suppresses the occurrence of smells caused by its deterioration, for example, irritating smell and unpleasant smell and gives deep- fried food of good taste. SOLUTION: This oil and fat composition for frying is prepared by adding ergosterol or vitamin D (ergocalciferol, cholecalciferol) to food oil in an amount of 0.0001-0.1 pt.wt. per 100 pts.wt. of the food oil. |
