HIGH SPEED, PRECISION HONING UNIT

PROBLEM TO BE SOLVED: To provide a honing unit that is able to make up a precise and rigid cutting edge speedily. SOLUTION: In this high speed knife honing unit, the surface of a first rotary abrasive member is a circular truncated cone itself, making up a first cutting edge face with a very small groove and minute burr. A second state 8 is a new compound conical body formed by a honing wheel composed of a minute abrasive embedded in an epoxy matrix. This honing wheel hones the cutting edge produced at a first stage 7 into the form of an inverted triangle with a radius of curvature at typically several microns (μm) or yet smaller apex (cutting edge) in accordance with the hardness of knife steel. A unique cutter holding mechanism presses a knife edge down to the precisely regulated angle in regard to each of grinding (first) and honing (second) stages 7 and 8. Since yet larger grinding force is manifested in proportion to the yet thicker knife edge, the number of honing times is almost the same as a general extent ranging from a small fruit peeling knife (6 inches) to a kitchen cleaver of a large chef knife (10 inches).
