PROBLEM TO BE SOLVED: To provide a machine for forming a cooked rice preventing a formed cooked rice such as a cooked rice for a sushi (vinegard rice with ingredients thereon) from drying and enabling the preservation of the cooked rice under a refrigeration by improving the preserving capability of the cooked rice, by installing a supplying means of a solution of a moisture keeping material for applying the solution of the moisture keeping material capable of gelling be cooling to the cooked rice. SOLUTION: This machine for forming a cooked rice divided to a set amount (b) supplied by a set amount cooked rice supplying device 2 to a prescribed shape by forming devices 3, 5, is obtained by installing a supplying means 4 of a solution of a moisture keeping material 4 for applying the solution of the moisture keeping material capable of gelling by cooling to the cooked rice. The supplying means 4 of the solution of the moisture keeping material is constituted e.g. by a spraying device 17 of which spraying direction is fixed to a conveyer belt 8a with a bracket 16 at the front part of a main body 1, a tank for loading the solution of the mister keeping material connected to the spraying device 17 through a supplying hose 18 and a pump 20 conveying the solution of the moisture keeping material in the tank to the spraying device 17. As the solution of the moisture keeping material, e.g. a mixed solution of a high molecular carbohydrate obtained by blending an edible vinegar, sucrose, inosinic acid, glucomannan, pectin, etc., is preferable. |
