PROBLEM TO BE SOLVED: To promoter spore formation of moulds in a liquid medium useful for producing fermented foods, etc., by using galactose and/or fructose as a carbon source of the liquid medium. SOLUTION: Galactose and/or fructose are used as a carbon source in a liquid culture medium for culturing moulds of the genus Penicillium, etc., in a liquid in a concentration of about 0.5-5wt.%. Obtained spores of the moulds are useful as spawns for producing enzymes, materials, mycelia, fermented foods, etc., and converting materials. |
