The invention features a method for drawing off fine wines, in which the barrels are located at different levels; at the lower part of each barrel (1a, 1b, 1c) is placed a drawing-off cock (9) capable of either obturating this orifice, or of allowing the fine wine to flow downwards above a determined level, or of communicating the lower part of the barrel with the outside; by means of a pipe (12), the drawing-off cock (9) is connected to the upper opening of another barrel at a lower level (1c), the drawing-off cock (9) of the barrel to be drawn off is opened to allow the wine to flow under gravity. When the wine has been thus drawn off, the lower end of the pipe is moved and the drawing-off cock position is changed to allow the discharge of the dregs (11) into a container; a water jet is introduced inside the barrel (1b) which has just been drawn off so as to wash it and the drawing-off cock of the barrel which has just been drawn off is closed so as to allow it to receive the fine wine from another barrel.
