FIELD: food-processing industry. SUBSTANCE: method involves massaging meat, at final stage of mincing process, by pieces of inclusions separated from surrounding tissues, with massaging being conducted with periodically varying intensity. Pieces of inclusions may be extracted from discharged content of accumulating space and remaining meat may be returned into picker roll for further mincing. Cutting unit of picker roll has at least one flexible member, which is clamped together with screen and knives. Spacer sleeves are put onto knife shaft between hubs of housing of single-sided knives. At least one sleeve is composed of two parts. Knives cutting edges may be formed as trapezium with bases having diameters equal to that of places of disposition. Working parts of screens adjacent to knives cutting edges are formed as annular beads. Screens may be provided with annular shock-absorbers tightened onto screens. EFFECT: increased efficiency, simplified construction and improved quality of product. 23 dwg |
