PROBLEM TO BE SOLVED: To obtain a processed egg yolk food that develop no eggy smell nor offensive odor, has excellent flavor and texture, and is suitable for frozen sweets, etc., from a liquid mixture of egg yolk, sucrose and water by heating the mixture at a predetermined temperature to denature the egg yolk. SOLUTION: This processed egg yolk food is obtained by mixing preferably 5-15wt.%, as solid matter, of egg yolk (A), 10-60wt.% of sucrose or the like (B) which contains 0.01-0.5wt.% of xylosi, and water (C), boiling the mixture at 100 deg.C or higher temperature to denature the egg yolk, and preferably concentrating the mixture in vacuo after the denaturing by heating. |
