PROBLEM TO BE SOLVED: To produce a beer capable of adding even a crude drug which is a solid material such as a medicinal herb thereto and reduced in difficulty in drinking such as the bitterness of the crude drug by adding the crude drug (or its extract) to the beer fermentation stock liquor before the fermentation with a brewer's yeast in a process for producing the beer. SOLUTION: A crude drug (or its extract) is added to a fermentation stock liquor before the fermentation with a brewer's yeast, preferably at the time of boiling in a process for producing a beer (and the resultant malt extract mixture, as necessary, is heated or the crude drug is taken out) to carry out the fermentation. A larger amount of ingredients in the crude drug is extracted by usually adding about 1-100g crude drug to 9 L beer fermentation stock liquor. |
