PROBLEM TO BE SOLVED: To obtain a yeast essence excellent in high permeability without contaminating an environment, by filtering a yeast essence comprising an autolysate of yeast as a flavor component by a precision filtration film having an average pore diameter in specific range so as to remove a yeast smell, a bitter substance, a flavor expression inhibiting substance, etc. SOLUTION: A yeast essence comprising an autolysate of yeast, a decomposition product with an enzyme or an extract with hot water as a flavor component is filtered by a precision filtration film such as a precision filtration film of a hollow yarn type made of a polyvinylidene fluoride having 0.05-1μm average pore diameter to give the objective purified yeast essence. |
