PROBLEM TO BE SOLVED: To obtain the subject compound useful for a food, a medicine, a reagent and industries in high yield, by bringing an enzyme derived from a strain of the genus Penicillium, capable of producing a xylosyl or xylobiosyl polyhydric phenol in the presence of a polyhydric alcohol. SOLUTION: A strain [e.g. Penicillium sp.950,116-A (FERM-P 15,628)] belonging to the genus Penicillium, hardly having xylanase activity, capable of producing a xylosyl or xylobiosyl polyhydric phenol is cultured. The prepared culture product or an enzyme capable of forming the xylosyl or xylobiosyl polyhydric phenol collected from the culture product is brought into contact with a xylan or a xylan hydrolyzate in the presence of a polyhydric phenol. A xylose residue or a xylooligosaccharide residue is converted into the polyhydric phenol to give the objective xylosyl or xylobiosyl polyhydric phenol useful for a food, a medicine, a reagent, an industrial chemical compound and an intermediate for an organic compound in high yield. |
