PROBLEM TO BE SOLVED: To obtain sliced meat of salmon having a fixed shape and a given weight, by making fishes into slices and forming a cylindrical material from the slices by a specific method so as to efficiently and inexpensively process fishes, especially salmon by a fewer processes than those of a conventional method. SOLUTION: Fishes are cut into slices each in almost the same thickness. Then the slices are piled in a mold in turns and the slices are subjected to a mold treatment deformation by bonding the slices between the slices with an adhesive comprising a mixture of fibrinogen and thrombin to give a cylindrical material. Preferably the fishes are cut along a symmetrical face into two parts and each part is cut into plural slices. Preferably the slices have a square having 10cm side or a square having 5cm side. The slices are piled so as to extend the vertical axis direction of the original form of a fish in parallel with the bottom of the mold to give the cylindrical material of the fish, cooling or freezing the material and slicing the cylindrical material in parallel with the vertical axis direction of the original fish. |
