<p>PROBLEM TO BE SOLVED: To provide a pickling method which can rapidly pickle vegetables and a device therefor. SOLUTION: Vegetables and seasonings are charged in a vessel 1 inclined to the horizontal plane and the vessel 1 is rotated around the axis line 1a of the main body of the inclined vessel. The vegetables are allowed to rise up along the inner surface of the peripheral walls of the vessel 1, then to naturally go down whereby vegetables are allowed to collide to peripheral walls and/or other vegetables until the seasoning solution soaks into the vegetables. In addition, the vessel 1 can be rotated around the rotation axis 4 inclined to the horizontal plane as well as another axis line 1a inclined relating to the rotation axis 4. This lightly pickling device comprises a bottom-having vessel equipped with a taking means which can lift and fall vegetables along the inner wall surface.</p> |
