PROBLEM TO BE SOLVED: To industrially mass-produce a syrup containing a nigeroligosaccharide at a high content. SOLUTION: For example, an aqueous solution of a saccharide, prepared by making one or more selected from α-amylases, β-amylases, amylases capable of producing oligosaccharides and debranching enzymes act on a liquefied starch solution and containing >=50wt.% saccharides having >=2 polymerization degree in the saccharide solid content is used as a substrate and an enzyme capable of producing a nigerooligosaccharide by transglycosidation and condensation reactions is then made to act thereon to afford a nigerooligosaccharide- containing syrup containing >=30wt.% nigerooligosaccharide in the saccharide solid content. The one or more selected from the α-amylases, β-amylases, amylases capable of producing the oligosaccharides and debranching enzymes and the enzyme capable of producing the nigerooligosaccharide by the transglycosidation and condensation reactions may simultaneously be made to act on the liquefied starch solution to provide the nigerooligosaccharide- containing syrup. |
