<p>The production of an activity-stable and low-dust enzyme granulate for use in food technology applications or for working into recipes for food technology applications, for example, in the production of baked goods and farinaceous products, in starch processing, or in brewing, is described. The activity-stable and low-dust enzyme granulates obtained according to the production methods and their use in food technology are also described. In another, special aspect of the invention, the use of especially selected flours are very generally described as an auxiliary (for example, as a carrier or filler) for the production of enzyme granulates for various application purposes.</p> |
