PROBLEM TO BE SOLVED: To provide a method for preserving vegetables in a frozen state, capable of storing vegetables for a long period of time. SOLUTION: Dehydrated vegetables with a small amount of air are packed into a bag and the frozen and preserved. Especially the volume of air in the bag is made within 10% to 20% of the whole volume in the bag and the freezing temperature is made at -15 degree to -20 degree.
