PROBLEM TO BE SOLVED: To obtain a phenolic glycoside which is useful as a reagent for determining the activities of antioxidants, antimicrobial agents and enzymes by reaction of a phenol with β-1, 3-glycosylsaccharide in the presence of an enzyme preparation having the β-1,3-glucanase activity. SOLUTION: The objective phenolic glycoside which is useful as a reagent for determining the activities of antioxidants, antimicrobials and enzymes is obtained by reaction of (A) a phenol of the formula (X is H, OH, nitro), for example, hydroquinone, p-nitrophenol or the like, with (B) a β-1,3- glucosyloligosaccharide, for example, β-1,3-glucosylpolysaccharide or β-1,3- glucosyloligosaccharide in the presence of (C) an enzyme preparation having a β-1,3-glucanase activity, for example, a saccharide transferase, for example, kitalase or driserase, obtained from Streptomyces sp. DIC-108 strain (FERM NO.253). |
