The pizza oven comprises a hearth (1) enclosed in a vaulted enclosure. The hearth extends internally from the front wall as far as the oven rear wall. The fire (2) is placed outside and below the hearth plane at the level of the vertical base (22) of the vault (8). It communicates with the oven upper chamber (16) through the passage (3) which extends from front to rear inside the oven on the whole fire surface. The combustion gases flowing inside a conduit (5) pass over the lower surface of the hearth between it and the oven lower insulating base (4). The conduit receiving the combustion gases from the fire at one end discharges them at the other end to an exhaust conduit (6) through an inlet in the oven wall.
