The description relates to nucleic acid molecules which code the potato debranching enzyme and transgenic plant cells and plants in which the synthesis of an amylopectin with modified properties occurs owing to the expression of a debranching enzyme from potatoes or the inhibition of such an endogenous debranching enzyme activity.
