A animal protein-free, vegetable protein based, 10-45 wt.% soya protein containing sausage stuffing meat also contains a soya extract and water. A homogeneous colloidal soln. is prepd. This is mixed with tofu, soya fragments, cereal starch and/or ground cereals, cereal protein extract, and ground oil seeds, together with plant based, consistency stabilisers, salt and spices. Round casings are stuffed with an appropriate mixt. and are smoked; smoke flavour-red or cold smoked for flavour. Finally the prod. is heat-treated at 75 deg C temp. using a waterbath or steam treating chamber. |
