PROBLEM TO BE SOLVED: To obtain a new α-amylase inhibitor extremely high in inhibitory activity against α-amylase and high in safety, useful in a diet food and preventing and treating diabetes and obesity, comprising a fraction prepared by extracting cinnamon with a hydrophilic solvent. SOLUTION: This α-amylase inhibitor is obtained by subjecting dried cinnamon to extraction with a hydrophilic solvent, distilling away the solvent, drying the extract, partitioning the extract with a non-hydrophilic solvent and water and drying the non-hydrophilic solvent layer, shows about 0.47 and about 0.11 Rf values in thin layer chromatography (plate: silica gel, developing solvent: 85% n-propanol), exhibits extremely high inhibitory activity against α-amylase, is high in safety, is useful as a diet food, etc., and is preventing and treating diabetes and obesity. The α-amylase inhibitor is obtained by immersing dried cinnamon in hexane, defatting, subjecting the cinnamon to extraction with a hydrophilic solvent such as methanol, concentrating the prepared extracted solution, partitioning the concentrate with a non-hydrophilic solvent such as ethyl acetate and water and drying the non-hydrophilic layer. |
