PROBLEM TO BE SOLVED: To efficiently obtain trehalose useful as e.g. a preservative for medicines, physiologically active substances and foods by subjecting maltose to microbial cells (treated product) of microorganisms belonging to the genus Flavobacterium and capable of converting maltose to trehalose. SOLUTION: Maltose is subjected to the microbial cells (treated product) of microorganisms belonging to the genus Flavobacterium and having ability to convert maltose to trehalose [e.g. Flavobacterium sp. F-2 (FERM P-15325)] and converted to trehalose, thus obtaining the objective trehalose in large quantities at low cost. The trehalose is useful as a preservative for e.g. medicines, diagnostics, hormones, fertilized eggs, sperms, physiologically active substances, enzymes, microorganisms, foods, as a moisturizing agent for cosmetics, or as a low-calorie sweetener. |
